A deep pit is filled with scorching hot stones. Damp sacking and shredded banana leaves are placed over the stones, creating steam. The kai (traditional food) is placed in the umu and then covered with leaves and earth. It is then left to steam for about two hours.
After dinner experience the Cook Islands' most dazzling display of music, costume and dance. The music has been handed down through the generations and guests are greeted with the fast paced tempo of drums and ukeleles.
Cook Islanders excel at dancing, singing and drumming and many are taught the traditional music, movements and rhythm before they even start school.
